That’s right. Salt your steaks overnight. Why? The salt will break down the muscle fibers and draw out the moisture to create it’s own brine (aka salty solution) on the meat’s surface. Then when you give it the time to rest overnight, the salty goodness will be reabsorbed into the meat for the best steak you’ve ever had.
…ok, it’s the real world, sometimes we just don’t have the time. So if you just bought a steak and want to make it right away, let the steak come to room temperature, then salt it just before you add it to the heat. Not 10, 20, 30, 40 minutes before…unless you like dry meat!
Here’s a step-by step: 1) salt your steak liberally with kosher salt on both sides 2) put it on a cooling rack fitted in a sheet pan 3) toss it on the lowest shelf of your fridge, uncovered, overnight 4) take it out and let it come to room temp 5) cook it 6) let the steak rest for at least 10 minutes before eating!
